9 1/2 cups flour
1 1/2 cups milk
2 Tblsp yeast
2 tsp salt
2 Tblsp dough enhancer (optional)
1 egg
3/4 cup sugar
2 sticks of butter
Scald 1 1/2 cups milk in a glass bowl in the microwave. Add 3/4 cup of sugar, 2 tsp salt, and 1 stick butter. Stir until the sugar is dissolved and the butter is mostly melted. In another bowl place 2 cups of lukewarm water. Sprinkle 2 Tblsp of yeast and 1 Tblsp of sugar over the water. Let set until dissolved and foamy. To the milk mixture add, 2 cups of flour, and 1 egg. Mix well. When this has cooled slightly add the yeast mixture and mix well. If you are using dough enhancer, add it at this time. Let dough rest for about 15 minutes.
Add the remaining flour 2 cups at a time mixing well after each addition until the dough is only slightly sticky. Cover and let raise in a warm place until doubled in bulk. At least an hour.
Punch the dough down and divide into 4 equal parts. Lightly flour your work surface. Roll each part into about a 12" circle. Spread dough with softened butter. Cut into quarters, then cut each quarter in half. Starting at the wide end, roll the dough to form the crescent.
Place rolls on a lightly sprayed baking sheet, cover loosely with plastic wrap, and set in a warm place to raise until doubled (at least an hour). Bake in 350 degree oven for about 15 minutes until lightly browned. Rub softened butter over the tops.
