Easy Peachy Pork Chops

I made this reccipe in the dutch oven while camping last summer. (Byrons' Dutch Oven Recipes).  It is almost like having dessert right along with your dinner.  The mustard adds a little "kick" to the chops which I thought blended rather nicely with the sweetness of the preserves.  I thought it might be just as good baked in the oven at home.    You will need the following ingredients:
1 pkg stuffing mix
4-6 bonelss pork loin chops
1 can sliced peaches
2 tsp Dijon or coarse ground mustard
2 tsp dried minced onions
1/4 cup apricot preserves








Salt and pepper the pork chops.  I like to brown them in a fry pan first but it is not necessary to do this.


 Drain the juice from the peaches into a measuring cup.  Add water to make 1 1/2 cups total.  Mix water with stuffing mix and spice packet in a large bowl.  Stir until water is mostly absorbed into the stuffing.  Spread stuffing in the bottom of a baking dish



Place the pork chops on top of the stuffing.

In a small bowl, combine the apricot preserves, onions, and mustard.  Stir well, then spread over the pork chops.  Arrange the sliced peaches on top.  Cover tightly with foil and bake for about 40 minutes depending upon the thickness of your chops.
