Turkey Tetrazzini

I had this dish once when I was in the hospital.  Most people think that hospital food is disgusting, but for some reason I really liked the Turkey Tetrazzini that day.  I have made it several times trying to find a really good similar recipe.  I think this just might be the one. 
You will need the following ingredients:

2 cups cooked turkey breast
3 dry cups wide egg noodles or linguini
1/2 cup cooked bacon
1 cup sliced mushrooms
1 cup frozen peas, thawed
1/2 cup finely diced onion
1/2 cup finely diced red pepper
1 tsp minced garlic
1 Tblsp olive oil
1/3 cup flour
3 cups chicken broth
1 cup half n half or whole milk
1/3 cup white wine
1 Tblsp parsley
1 tsp thyme leaves
1/4 tsp coarse ground black pepper
1/2 tsp salt or to taste
1/2 cup fresh grated Parmesan cheese
1 1/2 cups shredded Monterey jack or Mozzarella cheese
1 Tlbsp fresh squeezed lemon juice
1 cup fresh bread crumbs (1-2 slices of bread)
1 Tblsp butter

Cook either egg noodles or linguini according to pkg directions.  Rinse with cold water and drain well.
Chop the turkey and crumble the bacon.  Place the noodles, turkey, bacon, and thawed peas in a 9 x 13 pan.  Preheat oven to 375 degrees.

Dice the red pepper and onion very fine in your food processor and slice the mushrooms.  (Note:  I do not like mushrooms so I didn't put them in mine)  Add 1 Tblsp olive oil to a hot frying pan.  Add the onion, peppers, and garlic.  Add a dash of salt.  Simmer for a couple of minutes until soft.  If you are using mushrooms, add them at this point.  Cover pan and simmer for a few minutes.


When veggies are soft, add 1/3 cup flour into pan and stir well.  Slowly add broth, half n half, and then the wine.  Add the parsley, thyme, pepper, and salt to taste.  Bring to a slight boil, then turn heat down and simmer about 10 minutes until thickened, stirring often.


When the sauce has thickened, remove from heat and stir in the cheese and lemon juice.


Pour sauce over the noodles and stir.


Place 1-2 slices of bread in your food processor and blend into crumbs to make 1 cup.  Add 1 Tblsp of butter and stir. Sprinkle bread crumbs over the noodles.  Bake for about 20 minutes at 375 degrees.
Let stand for about 5 minutes before serving.
