Cheddar Corn Chowder
Cheddar Corn Chowder
This is a very safisfying soup with a wonderful blend of mild, sweet flavors with just the right amount of spice via the hot sauce you add into your individual bowl. It is a lighter cream soup using Fat Free Half n Half and no butter. You will need the following ingredients:
2 cans chicken broth2 cups sliced carrots
1 cup sliced celery
1 cup diced onion
1/2 red bell pepper diced
1 can cream corn
1 cup frozen white corn (sweet)
2-3 small red potatoes diced
1 Tblsp dried parsely
1 tsp sea salt
1/4 tsp pepper
1 tsp minced garlic
1 3/4 cup fat free half n half
1/4 cup flour
1 cup shredded cheddar cheese
1 cup shredded Mozzarella cheese
hot sauce to taste
In a large stock pot combine broth, all veggies, and spices. Simmer covered for about 30 minutes until the veggies are soft. Remove from heat.
In a small saucepan combine the half n half and flour. Stir over medium high heat until thickened. Add the cheese and stir until melted. Slowly add to the soup and mix well. Serve with a couple dashes of hot sauce (more or less depending upon your taste) in each bowl.
