Crock Pot Pulled Pork Sandwiches

Today I am in the mood for a really simple Sunday dinner.  I bought some pork loin roasts on sale the other day to have on hand for chili verde and such.  I like to stock up when things are on sale so I don't have to go to the store too often.  Plus staying out of the store saves me a lot of money.   Funny how that works don't you think?   I decided to make pulled pork in the crock pot for easy, yummy sandwiches.  You will need the following ingredients.

2 lb pork loin roast
1 cup ketchup
1/4 cup dark molasses
1/4 cup honey or brown sugar
1 Tblsp lemon juice
1 Tblsp Worcestershire sauce
1 Tblsp coarse mustard
1 tsp fresh minced garlic
1/2 can Dr. Pepper
salt and pepper
optional: caramalized onions, dill pickles,
and Pepper-Jack cheese


Trim all visible fat from the roast.  Place roast in the crock pot and salt and pepper generously.


In a medium mixing bowl, combine the ketchup, molasses, honey, garlic, W sauce, lemon juice, and mustard.   Pour in 1/2 can of Dr. Pepper and gently stir.


Pour over the roast, cover and cook on low for about 8 hrs.  I tilted my lid slightly to let some of the moisture evaporate.


About 1 hour before the roast is done, I like to add some caramalized onions.  See the crock pot method of making these under the label "Vegetables" on this blog.   To serve, shred the pork using two forks.


Serve on crusty french bread or hamburger or hoagie buns.  Right now I am wishing I had a nice slice of Pepper-Jack cheese to go with this.
