Italian Stuffed Peppers in the crock pot

Here is another dish I have never made, or even eaten before, stuffed peppers.  I gathered a few recipes  for ideas, looked in my fridge to see what I had for ingredients, then pulled out my crock pot and started mixing.  I didn't have ground beef so I used mild Italian sausage.  I didn't have cauliflower so I used a grated sweet potato.  I didn't have green bell peppers so I used red, yellow, and orange.  I didn't have tomato paste so I used ketcup.  You're probably wondering at this point why I tried this recipe at all today since it seems I didn't have most of the necessary ingredients.  Well what can I say, some days I'm just up for an adventure.   I'm not sure what stuffed peppers are supposed to taste like, but I thought these smelled and tasted terrific.   You will need the following ingredients:

1 lb ground Italian sausage, ground beef, or ground turkey.  I think any of these would be good.
4 bell peppers any color
1/3 cup finely diced onion
2 cups shredded sweet potato or carrot
1/3 cup ketchup
1 tsp fresh minced garlic
2 tsp oregano leaves
2 tsp tarragon leaves
1/2 tsp sea salt
1/4 tsp coarse ground pepper






Slice the top off the bell peppers and remove the ribs and seeds.


Dice the onions finely in your food processor.


Peel and shred the sweet potato or carrot.


In a large bowl, combine the uncooked meat, spices, ketchup, onions, and potato and mix well.


Stuff the mixture into the four peppers.  Place the peppers in your crock pot.  Add 1/2 cup water.  Cover and cook on low for 8 hours or on high for 4-5 hours.


I cooked mine for 5 hours which may have been a little too long as the peppers were a little saggy.  (not soggy)  I'm not sure what they are supposed to look like when done since I've never seen them cooked before.


 I could hardly wait to try these.  The house smelled sooooo good while they were cooking.  I think the sweet potato really added to the wonderful flavor and I do prefer the milder flavor of red peppers over green.   I served them with brown rice.   Delicious.  I will be making these again soon I think.
